Canh Mang Chua (Vietnamese Sour Bamboo Shoot Soup)

Sour bamboo shoot soup is the taste of northern Vietnam, and the sourness of preserved shoots is something vinegar cannot fake convincingly. The shoot is soaked and rinsed first to control how sharp the finished bowl will be, which is the one part of this dish that needs a decision rather than a measurement. The pork is cooked until it gives way completely.
