Bánh Bò Nướng (Vietnamese Baked Sponge Cake with Pork Filling)
A honey-coloured sponge with a savoury pork and raisin layer.
Bánh bò is a southern sweet bread, and the name refers to baking rather than to the savoury pork loaf it can be mistaken for. The sponge is baked honey-gold and stays damp for days, which is why it appears at breakfast and not only at dessert. The savoury pork and raisin layer is a deliberate contrast to the sweetness of the bread, and it is the version worth having.
