Southern Sweet Potato Pie (American Sweet Potato Custard Pie)
A silky spiced sweet potato custard in a flaky pastry shell.
Sweet potato pie is the pie people in the south make for thanksgiving instead of pumpkin, and there is no version that will not be called too sweet. The sweet potato roasts first so the moisture is gone before it goes into the custard, otherwise the pie weeps. Nutmeg goes in later than most recipes admit.
