Country Fried Steak with Pan Gravy (American)
Floured and egg-dipped steak fried until craggy and golden.
This is the older relative of the chicken fried version, from a cooking method that used the whole animal rather than one cut, and the pan gravy is made in the same pan and is brown and thin. The flour goes on in two rounds and the crust is deliberately uneven. It is served on a hot plate with a lot of nothing else.
