Biscuits and Gravy (American Sausage Gravy)

Biscuits are cut from a dough that is dropped rather than rolled, which is what gives them the ragged top and the height from the baking powder rather than from fat. The gravy is white because the drippings are the point, and it is seasoned hard so it can stand up to all that butter. It is breakfast food eaten at any hour.
