Perde Pilavi (Turkish Chicken Pilaf)

The rice is steamed over the braised chicken and hidden beneath a pastry sheet that traps the steam, which is then lifted off at the table. That lid is why the name means curtain, and it gives the grains a separate, intact texture. It is a ceremonial dish served at weddings and by pilgrims coming home.
