Mercimek Köftesi (Turkish Red Lentil and Bulgur Rolls)
Soft bulgur and red lentil patties seasoned with herbs and spices, served cold with lettuce.
Lentil and bulgur patties stand in for meat on the fasting tables, so the mixture is rolled and shaped by hand into small ovals. Take them out of the pan slightly underdone, since they firm as they cool, and steam them gently rather than browning them hard. They are laid on lettuce and eaten cold with lemon.
