Arroz Doce (Portuguese Sweet Rice with Cinnamon)
Rice pudding baked slowly with cinnamon and orange.
Arroz doce is the Portuguese sweet rice, and in many households it is the first thing made when someone is unwell, which explains why it can seem unfashionable elsewhere. The rice is baked rather than boiled, so the grains stay separate and the top turns caramelised. It is eaten warm, sometimes with cinnamon and sometimes with nothing added at all.
