Pancit Canton (Filipino Stir-Fried Noodles with Char Siu)

Pancit canton is the thicker, richer noodle order, and its char siu comes from char siu bao culture rather than from adobo. The noodles are fried hard enough to pick up a little char, and the vegetables are added in the order of how long they take. A little of the sauce is deliberately left behind so the noodles are glossy rather than swimming.
