Pancit Bihon (Filipino Rice Vermicelli Stir-Fry)

Pancit bihon is the everyday noodle dish that runs on speed and on the balance of soy against calamansi, with the finishing squeeze of citrus doing most of the work. Thin vermicelli cooks faster than the thicker noodles and takes sauce differently, which is why it is its own order rather than a substitution. Calamansi is squeezed at the table, so the sharpness is adjustable.
