Suspiro de Lima (Peruvian Meringue with Cream Cheese)
Soft meringue nests filled with a sharp cream cheese.
The city claims a meringue dessert of its own, built from meringue that is left to cool dry overnight until it can be filled without weeping. Cream cheese filling goes into the cooled nests in the morning, and any meringue that cracks is set aside for another purpose. It is best made a day ahead, which is most of the reason home cooks love it.
