Seco de Res con Aji (Peruvian Beef Stew with Peppers)
Beef chunks simmered in a pepper-heavy dark sauce.
This version of the Lima dry stew is heavy on the peppers, sometimes using a whole dried chilli to give a smoky back note to the beef. Because the sauce is meant to coat rather than pool, the pot is left uncovered so the liquid can go somewhere. Rice is not optional; it is what the sauce is eaten with.
