Pollo a la Brasa (Peruvian Roast Chicken)
Peruvian-style roast chicken marinated in soy and spices, served with green sauce.
Pollo a la brasa is the Peruvian take on rotisserie chicken, marinated in soy, paprika and garlic and turned on a spit over charcoal. It arrives with ají amarillo, fries and a green sauce of coriander and avocado, and the rotation matters more than the heat. Long marinating hours are what shift the flavour from grilled to deeply savoury.
