Ajiaco (Peruvian Chicken and Potato Stew)
A rustic stew of chicken, potato, pea and aji amarillo.
Ajiaco is the rustic Lima stew where long-cooked potatoes break down to thicken it, so the bowl thickens on its own as it cooks and gets more substantial the longer it sits. Yellow chilli and peas go in early while the chicken stays whole until the end. It is the pot people make when they are feeding a crowd and have nothing to impress anybody with.
