Pudding (New Zealand Steamed Pudding)
A light steamed pudding with a vanilla custard sauce.
This is a steamed sponge pudding, the oldest kind of pudding, and it depends on being served immediately with custard rather than allowed to sit. Pour the custard over rather than putting the slice into it, so the crumb is not soaked through in one bite. It is a school-dinner and home-kitchen staple, served in a bowl rather than a slice.
