Kiwi Mince and Cheese Pie

The mince and cheese pie is the New Zealand version of a savoury pie, with the cheese melted into the meat rather than laid on top of it. Season the mince well and cook it down so there is no loose liquid, or the pastry goes soft underneath. It is a bakery standard, and it should hold together when it is lifted out.
