Mee Goreng Mamak (Malaysian Indian-style Fried Noodles)
Spicy fried yellow noodles with tofu, potato and crispy fried shallots.
Mee goreng mamak belongs to the Indian-Muslim stalls, where the wok is used more like a mixing pan than a grill and the noodles are pushed around in a thick, oily sauce. Tofu puffs, potato and fried shallots go in at different moments, and the shallots are fried until crisp and coloured but not bitter. A squeeze of lime at the end keeps the plate from weighing heavy.
