Kuih Ketayap (Malaysian Honeyed Rice Pancakes)
Griddled rice and coconut pancakes drenched in palm syrup.
Kuih ketayap is the griddle cake sold by mamak stalls alongside teh tarik, linked to Ramadan mornings when the sweet was worth waking early for. Small rounds cook slowly on a buttered griddle so the outside sets before the centre loses its custard texture. The palm syrup is poured over as they come off the heat, not during, or the cake turns soggy underneath.
