Kuih Keria (Malaysian Sweet Potato Doughnut)
A soft sweet potato doughnut glazed with sugar syrup.
Kuih keria is the sweet potato doughnut of Ipoh and Perak, where the street version is a whole ring fried to a deep colour rather than a sugared powder. Sweet potato is cooked and mashed before it meets the dough, which is what keeps the crumb soft and the inside tasting faintly of coconut. Starch holds a lot of moisture, so frying too fast gives a pale shell with a dense core.
