Smen (Moroccan Preserved Butter and Spice Dip)

Smen is the preserved butter of Morocco, and it is closer to a flavoured butter than to a dip until herbs and spices are beaten into it. Salted to preserve, it is sold in cones and kept for months, which is why it appears in winter dishes. When it is melted, the sediment at the bottom is deliberately scraped up and included.
