Mrigla (Moroccan Spiced Fish Pasty)
Layered pasty of spiced fish, almonds and herbs.
Mrigla is a filled fried pastry that belongs to the Jewish communities of Fez, and the combination of fish, almond and spice in a sweet-spiced shell is characteristic of them. The layers are pressed and fried so the pastry is thin and hollow, and it is eaten in small pieces. Its history is bound up with Morocco's Sephardic past rather than with the broader Maghrebi kitchen.
