Tortellini in Brodo (Italian Tortellini in Broth)
Pork and cheese tortellini in a clear beef broth.
Tortellini in brodo is Emilia-Romagna at its plainest, a clear beef broth with small pasta dumplings that hold their shape and their filling. The broth is seasoned lightly so the pasta is not competing with anything, and it is served in a warmed bowl rather than a plate. It is lunch, or a light supper after a late evening elsewhere.
