Fritto Misto (Italian Mixed Fried Seafood)
Lightly battered shrimp, squid and white fish fried crisp.
Fritto misto is what you get at the Italian seaside when the day's catch is fried rather than grilled, in a featherlight batter that should barely colour. Shrimp, squid and white fish each have their own moment in the oil, so they are often fried in separate batches. It is eaten standing up, with lemon and salt, before it can soften.
