Cannolo Siciliano (Sicilian Fried Pastry Tubes)
Crisp fried pastry tubes filled with sweetened ricotta and chocolate.
Cannolo siciliano carries a very Sicilian habit: the sweet ricotta is often flavoured with orange zest or chocolate, and the tube is filled only after frying. The filling sits in the crisp shell without a seam of moisture, which is the detail that separates a good cannolo from a soggy one. In Sicily it is bought from the cart, never made at home.
