Shirin (Persian Honey and Saffron Pastry)
A thin honey syrup poured over a saffron and cardamom pastry.
Shirin is a pastry made for pouring, and the syrup is not an afterthought so much as the second half of the construction. The dough is deliberately lean so it can be rolled thin without going soggy once soaked. Cardamom is used sparingly enough that the rose and saffron in the honey remain legible.
