Kuku Sabzi (Iranian Herb Fritters)
Herb and vegetable fritters bound with flour and egg.
Kuku sabzi comes in a fried form as fritters, and the shape it takes differs sharply from the soft baked frittata. The herb mixture is bound with flour and egg rather than only with egg, so it holds together in oil. They are eaten warm, and a kebab with crisp edges is the natural partner.
