Khoresh Gheymeh (Persian Tomato Beef Stew)
Beef and dried lime simmered slowly in a bright tomato broth.
Khoresh gheymeh is one of the simpler Iranian stews, and that is its virtue: tomatoes, beef and dried lime, cooked until the broth is clean and bright. Dried lime is what supplies the sourness, and it cannot be substituted with fresh lime. The beef needs long braising to become tender without the broth turning muddy.
