Ghormeh Sabzi Rice Accompaniment... Kuku Kebab

Kuku kebab is the accompaniment traditionally built to go with ghormeh sabzi, minced chicken formed into a flat patty and fried hard at the edges so it holds against a wet stew. The rice and the kebab are cooked and served together rather than in sequence, and the crisp edge of the kebab is what keeps the pairing from being uniformly soft. Rice is sometimes folded into the patty itself.
