Vada Pav (Mumbai Spiced Potato Fritter Bun)
A crisp spiced potato fritter in a soft bun with chutney.
Often called Mumbai's burger, vada pav is sold from carts by the dozen and eaten standing up, usually before noon. The bun is a soft pav roll that takes the heat of the fritter without falling apart, and the whole thing depends on a sharp tamarind chutney cutting the fried potato. It is the most direct expression of how the city feeds people on the move.
