Shrikhand (Indian Sweetened Hung Curd)
Hung yogurt strained to a thick cream and sweetened with saffron and cardamom.
Shrikhand is what happens when hung yogurt is drained overnight until it is thick enough to hold a spoon upright. It is a festive sweet, eaten plain or folded into purani kachori, and it carries the same saffron and cardamom notes as the rest of Indian mithai. Chilling it well matters as much as draining it, since the texture is the entire point.
