Palak Paneer (Indian Spinach and Cottage Cheese Curry)

Palak paneer is a north Indian vegetarian main that manages to be creamy without dairy, since the body comes from pureed greens rather than cream. Fenugreek leaves are what give the gravy its slightly bitter, savoury character and distinguish it from a plain spinach sauce. Paneer is folded in at the very end so the cubes keep their shape in the finished dish.
