Goan Fish Curry (Goan Coconut Fish Curry)

Goa's cooking carries a Portuguese Catholic past alongside its Hindu and Muslim traditions, and its fish curries are built on coconut with kokum or vinegar for sourness rather than with tamarind alone. Coastal kitchens cook whichever fish came in that morning, so the recipe is a method rather than a specification. The gravy should reduce until it coats the fish and pulls slightly from the pan.
