Chana Masala (Spiced Chickpea Curry)

Chana masala is a everyday northern dal that relies on the tang of a tomato-onion gravy rather than on chilli heat, so it sits comfortably beside bread. It is a common vegetarian main and a classic way to use a pantry of dried chickpeas. The gravy should cook down long enough to turn jammy and to soften the raw onion into sweetness, and garam masala goes in near the end.
