Stifado (Greek Beef Stew with Onions)
A cinnamon-scented Greek beef stew with pearl onions and tomato.
Stifado is a stew built around onions rather than meat, and the onions are cooked long enough that they turn sweet and collapse. Cinnamon and bay give it a warmth that surprises people expecting something sharper. It is served with rice or potatoes, which are not in the pot.
