Spanakopitakia (Greek Spinach Pie Parcels)

Spanakopitakia are the portable version, small parcels rather than a tray, and that changes how the filo behaves. Each one is folded separately so the layers are contained, which means more work per serving but almost nothing to cut on the table. They are eaten standing up, straight from the tray.
