Profiterole (Greek Cream Puff Pastry)

Profiteroles are an exercise in choux pastry rather than a dessert, and the puffs are kept in the oven until they stop taking up space and start turning colour. They are filled close to serving so the pastry does not go soft inside. The chocolate is poured over hot so it sets against the shell.
