Yorkshire Pudding (British Batter Pudding)
Airy baked batter puddings with a crisp golden outside.
The batter has to sit for a while before the fat goes in, and cooks who skip the resting hour end up with heavy little pancakes instead. The oven must be properly hot and the fat allowed to foam before the batter meets it, or the rise will be thin. It is not a pudding in the sweet sense, which is why the name confuses people.
