Welsh Cawl (Welsh Lamb and Root Vegetable Stew)
A slow Welsh stew of lamb, pearl barley and root vegetables.
Cawl was a one-pot supper that went on the fire before the household went out, and it thickens as it cools because of the pearl barley rather than from any flour. Every household has its own version of what goes in it, and any Welsh cook asked will deny the borrowed stew their neighbours made. Traditionally eaten with bread, not potatoes.
