Trifle (British Layered Sponge and Custard)

Trifle is one of the few genuinely inherited dishes, and the sherry in the sponge is not optional nostalgia; it is what keeps the layers distinct instead of dissolving into each other. Fruit goes on at the bottom so its juice reaches the sponge, and the custard sets before the cream goes on. Assembled cold, eaten the next day.
