Toffee Apple (British Sticky Caramel Apple)

The sugar goes as far as hard caramel before the apple goes in at all, which is why the coating is glassy and the fruit inside stays pale. It is a fairground and market food, carried on a stick and eaten standing in the cold. The apple needs to be cold and firm, or the caramel seizes around a soft fruit and slides off.
