Steak and Onion Pie (British Suet Pastry Pie)

The suet pastry is what keeps the filling moist through the long bake, and it is lighter than the puff version for the same reason. Diced steak braises better than a steak in a slab, and the ale goes in early enough to cook down to a gravy. Pie is not cut until the day it is eaten.
