Mulligatawny Soup (Anglo-Indian Spiced Soup)

The name means pepper water, which tells you what the original was before the British added apples, coconut and the thickness it is now known for. It came home with the Raj and is the reason curry houses existed outside big cities at all. Reconstituting from a paste with tamarind rather than using fresh tamarind is the usual shop version.
