Cauliflower Cheese (British Baked Cauliflower with Cheese Sauce)
Cauliflower under a rich cheese sauce and crisp breadcrumbs.
This is a cheese sauce with a vegetable in it, and the sauce is made by stretching melted cheese with milk rather than by a roux, which is why it turns grainy if it boils. The breadcrumbs go on last and stay out of the sauce. It is a student dish and a winter dish and it is served in the same dish it was baked in.
