Tarte Tatin (French Caramelised Apple Tart)
Apples cooked in dark caramel and baked under pastry, served upside down.
The caramel is made first and left alone while the apples cook in it, which is why the fruit at the top is soft and the layers beneath are sticky. The pastry is rolled out to cover the pan and baked on top rather than underneath. Turning it out while hot is not optional.
