Steak Frites (French Steak with Fries)

Steak frites is a bistro dish built on the bistro's own logic: fast, generous and unarguable. The steak is seared hot and served rare, the fries are cut thin and cooked twice so they are crisp outside and soft within. Herb butter goes on the steak rather than the fries, and the plate is not fussed with.
