Soupe a l Oignon (French Onion Soup)
Deeply caramelized onion soup topped with gratinated gruyere crouton.
Onion soup is a dish that wastes nothing, since slow cooking turns the humblest onions into something worth an evening. Caramelising them properly takes longer than most cooks expect and cannot be hurried by turning up the heat. The cheese on top must be gratinéed under high heat or it will simply melt.
