Salade Nicoise (French Nicoise Salad)
Beans, potato, tuna and egg in a sharp vinaigrette.
Nicoise salad was devised in Nice as a dish with no cooking at all, which is why everything in it is cooked elsewhere and dressed here. The vinegar dressing is sharp enough to keep the potatoes and beans behaving like a composed dish. It is arranged, not tossed, which some consider an error.
