Sambusa (Ethiopian Triangular Fried Pastry)

Sambusa are the fasting pastry, filled with spiced onion, carrot and lentil so they can be eaten during the fasts, while the same triangles made outside the fast carry minced meat. They are built for sharing, sold by the dozen from a tray, and are at their best the same day while the pastry still shatters. Sealing the edges properly is what keeps the filling out of the oil.
