Mahmuri (Ethiopian Spiced Doughnut Bread)
A cardamom-scented leavened bread fried until crisp and golden.
Mahmuri is a leavened dough scented with cardamom and then fried rather than baked, which gives it a golden, faintly sweet surface and a soft interior. It fills the role of a sweet bun rather than that of a flatbread, and is often eaten with tea. Frying it means the oil must be hot enough to colour the outside before the middle overcooks.
