Firfir (Ethiopian Shredded injera with berbere)
Torn injera soaked in berbere sauce with berbere butter.
Firfir is what is left once a good injera has done its work at the end of a meal, torn up and returned to the pan with berbere sauce so that it softens and drinks. It is mostly a breakfast dish, eaten with a hot drink, and the sauce it sits in is usually shiro or a remainder from the night before. Berbere butter stirred in at the end keeps it from being heavy.
